ISA’s goal is to create an opportunity of bringing “Shochu” distiller, worldwide “Shochu” serving restaurants, and “Shochu” lovers together to further share the exclusive Japanese Shochu Culture.

As recently announced that Japanese “Washoku” is recognized by UNESCO as an intangible cultural heritage, the Japanese cuisine has become one of the most preferred choices of foods in the world.
Not only its exquisite taste but also for the healthy ingredients, Japanese cuisine is well recognized together with Japanese rice wine called “Sake” in North America and Europe.

Today the more of the restaurants and bars ranging from high end to low and the liquor stores in the world are serving and selling “Sake”.
However it is significantly noticeable that the familiarity of “Shochu” abroad is not quite established compared to “Sake”.

Despite of this tendency the more of the people, restraints, and cultures have been implying the interest in “Shochu” and have started to spread worldwide trend.

“Shochu” is a Japanese distilled beverage. It is typically distilled from barley (mugi), sweet potatoes (imo), buckwheat (soba), or rice (kome). However it is sometimes produced from other ingredients such as brown sugar or chestnut.

Typically “Shochu” contains 25% alcohol by volume, which is weaker than whisky or standard-strength vodka but stronger than wine and sake. It is not uncommon for multiply-distilled “Shochu”, which is more likely to be used in mixed drinks, to contain up to 35% alcohol by volume.
Also there are many ways to enjoy “Shochu” such as served straight, on the rocks, with water, with hot water, with soda water, with tea, and etc. It is proudly to mention that “Shochu” is one of the versatile alcohols which has no example of.

This is why the “Shochu” trend has been started among the people and restaurants worldwide regardless of their age, young and old. ISA is committed to gather and analyze the more reasons for people to enjoy “Shochu” and recipes for unique ways to compliment “Shochu” worldwide.
